@MercyK:  I love pies! I’m not sure how hard itw ould be to make enough for a whole big group though. Chocolate chip cookies are always A+ too!

I really, really enjoy these cookies:  Chocolate Mint Dreams.  Here’s a link to the cookbook they are in, (recipe is on page 12 of this).  I haven’t encountered 1 person who disliked this cookie (I guess if you’re not a fan of chocolate or mint you wouldn’t like these, though).

Since it’s Summer time here – I like to make something that is light and fluffy for dessert – and this is one dessert that I made that I LOVED!! If you like Snicker’s candy bars and apples (I know – weird combo – but SO GOOD TOGETHER!!) you will like this…the cool whip is so yummy!!!

My other go to is baklava which everyone is always super impressed about, but it’s really not that hard to make ๐Ÿ˜‰


And if you want something more time consuming, try these Oreo truffle balls. So good.

@Sassygrn:  I make a cherry pretzel pie that’s really similar to that, but less work because you use cherry pie filling, LOL! Let me find the recipe….

ETA: Found it! I have literally bribed police with this pie* (explanation below):

3 cups smashed pretzels (that’s about half a bag, I throw them in the food processor)
3/4 cups icing sugar
1 cup melted butter
– Mix all these together and set aside.

1 cup icing sugar
1 package of cream cheese (I use light cream cheese), softened
500 mL Cool Whip (that’s half a container, I use the non-fat kind)
– Cream together the icing sugar and the cream cheese. Fold in the Cool Whip.

Press half the pretzel mixture in the bottom of a pie plate or 9×9 pan. Next layer on half the Cool Whip/cream cheese mixture, then a can of cherry pie filling. Now put on the remaining Cool Whip/cream cheese mixture, and top with the rest of the pretzel mixture. Wrap in plastic wrap and freeze!

ETA again: Umm that didn’t sound good about bribing police, LOL! It’s a long story, but the marine police didn’t like our raft. We proved it was not illegal and buttered them up into liking us with this pie.
