Well tonight I have a work dinner, but it’s at a really nice restaurant so I’m sure I’ll be able to get something healthy.

Last night we made grilled skirt steak marinated in balsamic vinegar, brown sugar and worchestishire sauce and roasted brussell sprouts. That’s one of our favs. Another is grilled chicken marinated in olive oil, oregano, paprika, salt and pepper and whole wheat orzo with sauteed zucchini and mushrooms as a side. Both recipes we came up wtih 100% on our own as a result of so many long, complicated 1,000 ingredient recipes we just couldn’t follow.

I’m roasting some cauliflower, and going to carmelize onions and fennel to go on top of polenta. I love polenta, it’s so filling, a whole grain, and only 100 calories for a good size serving.

@stephanie63087:  We have a while filet of salmon in the fridge, I think this will be our dinner tonight, too!!  Well, that is assuming Fiance will feel like grilling once he gets home from work…I leave the grilling up to him!  If not, then Barillia plus pasta with meat sauce it is!

I’m hoping Fiance will make turkey burgers again. He made some on Sunday night that were DELICIOUS!

Lean ground turkey mixed with Worcestershire, garlic and salt. He also made oven roasted asparagus. SUPER yummy.

turkey chili is great, especially now that the weather is cooler. lots of protein and low in fat.

@ MissPeachTree, this is going to sound dumb, but will you please tell me what polenta is? I saw it last week in the vegetarian section of the produce department, and couldn’t figure out what it was/what to do with it, so I didn’t buy it. What does it taste like? (Mr. M is a vegetarian and I am vegetarian-friendly;)

I am having lunch right now – baked beans on rye toast mmmmm!

And for dinner I am having roast beef, with steamed carrots and broccoli and mashed potatoes!

i’m going for mexican food tonight for a friends birthday so it will likely be a pretty unhealtly meal =p

however, our favorite mexican type dish that is low-fat/fairly low-cal is chicken enchiladas!

low sodium cream of mushroom soup

low sodium chicken stock or broth

fat free sour cream

fat free cheddar cheese

chicken without the skin

corn torillas

YUM.
