I have been trying to cook real things and just eating the extras later instead of doing bagged meals or takeout.  I used to barely eat when I was alone, it’s hard to have the motivation.

PIZZA! I order a pizza and have it for the next day for lunch.

I used to live alone, though, so I can cook for one. I will occasionally cook a chicken breast and some veggies

DH works afternoons, so I’m on my own 4 nights a week.  I usually make something that has decent leftovers like spaghetti, or chicken/rice/salad, then he can either eat it when he gets home, or I don’t have to cook the next night 🙂

I’m awful about dinner when DH is at work.  This week I had 2 frozen lasagna dinners (Stouffer’s) and some leftovers.  One easy thing I actually cook for one is brats.

@KatNYC2011: nice! I know, I always feel “guilty” afterward and either hit the gym harder or eat something much healthier for my next meal. It’s so hard to be good all the time, though!

Egg noodles with butter and a little salt.

As little dishes as possible to clean. Though I have been known to each wheat thins and peanut butter as well for a meal.
