sallyloves90 :  I don’t know why people think low calorie or low carb “diet” food can’t be tasty! What are the low calorie “diet” food that your fiance would like to serve?

I don’t have any recipe suggestions, but a quick google search can find a lower calorie version of almost anything so that could be helpful.

If you had a mix of say, low cal options and then something a little more heavy does your fiance think she can’t control herself to not eat the heavy option (I’m kind of that way…)?

What do you usually eat now?  I’m of the mentality that you can eat healthy with pretty much anything, make a few substitutions during cooking and then portion control is key.

What does your fiancé want to be served?

I’d do a variety of dishes and serve them buffet style or family style. Here are some ideas of healthy dishes that I think a lot of people would still love:

White bean crostini

Bruschetta

Tray of olives, hummus, crackers, sliced vegetables

Roasted brocolli tossed with olive oil and spices and finished with a squeeze of lemon juice

Baked potatoes (or sweet potatoes) with a variety of fillings – just keep the filling options fairly healthy, e.g. olive oil/margarine, light sour cream, scallions, vegetarian chili

Stuffed roasted squash

Stuffed peppers

Marinated and baked chicken/salmon/tofu

Spinach salad with sliced red onion, cranberries, feta, oil and vinegar

Cold sesame noodle salad with julienned vegetables

Soups/stews, for example lentil soup, minestrone soup, vegetable-bean chili, butternut squash soup, tomato basil soup, etc.

Butternut squash mac and “cheese” (sauce is based around pureed roasted squash rather than cheese)

sallyloves90 :  While I personally love meat alternatives like you’ve listed, I can understand not everyone enjoying them.

Could you have vegetarian options, and maybe some grilled chicken or salmon for others with veggie sides? Maybe include some bread and butter to start with?

Also are you going for fancy, or more laid back style dinner party?
