Sounds about right!! Maybe some shredded lettuce, or if your really going all out offer ground chicken/turkey as a meat option.

@.twist.: I never have them because Fiance hates olives, but man, it’s like one of the best toppings to me.  BTW – I’m crashing your taco party.  =)

ETA: I thought I read lettuce, but maybe my brain played tricks on me.

yeah i second haveing chicken or turkey, if possible shredded chicken or diced chicken tastes better than ground chicken. and then salsa ofcourse!

Oh, and I suggest being prepared to have bowls and utensils as well in case someone decides to make a taco salad because it’s a bit more “neater” than eating tacos.  I know I’ll mix all my fixin’s in a bowl and use the hard shell crumbled on top.

Oh and maybe tortilla chips for those who want to make a taco salad.

 

ETA:  I agree with the suggestion of adding chicken.  I just tried a new recipe for chicken tacos and it was really good.  It uses boneless, skinless chicken thighs.  For every pound of chicken, add one can of cilantro-lime Rotel (but I’m sure any flavor Rotel would work) and one packet of taco seasoning.  Put the chicken in the crockpot and add the Rotel and taco seasoning and stir.  Turn the crockpot on low early in the morning and let it cook all day (8-10 hours or so).  The chicken will be very tender and fall apart.  Shred the chicken with a fork and stir …and you have yummy seasoned chicken for tacos.

@.twist.: if I’m feeling particularly gross, I’ll put the refried beans in first, then cheese, then meat, then lettuce/tomato. ORRR (and this is only when I’ve had a terrible week or month, or if my “friend” is visiting) I’ll spread refried beans and cheese on a soft shell and then wrap that AROUND the hard shell… omg I’m disgusting! haha
