My last dress fitting is Friday, so probably just some baby spinach with fat free feta, banana peppers, and fat free dressing.  Dieting sucks 🙁

Salad, Rigatoni with Meat Sauce & Garlic Bread

Except I didn’t even think about the fact that my first fitting is tomorrow.  Oopsie.  At least it should be taken in… I think!

Tonight is dinner with Mother-In-Law, actually, but tomorrow night is homemade tomato soup with crusty bread and fruit salad… YUM!!

I hate planning out meals in advance.  I always come up with something else I’m hungry for during the day so I never stick by my plan haha…. I actually shop for the sales and buy a mix of produce/meat/grains, then cook off of that.  When I get stuck, I use Supercook.com for recipies… it’s such an awesome site — you enter what ingredients you have, then they give you recipies you can make with what you have!  It’s great for those nights that you have a bunch of stuff to use up, but you don’t know what you could make with it.

I am alone again tonight, so I am making homeade pizza.  Honestly, I have lots of groceries here I could have eaten, but for some reason, homeade pizza sounded really good, so I picked up some ingredients while out and about 😉

I’m not positive what I’m eating yet but if my husband isn’t home by the time I eat it’ll probably be clams.  We bought clams yesterday from a place we never have before so we aren’t sure how they taste and therefore didn’t buy many (only enough for one person).  Although I’m not sure yet exactly what I’d have with them.

Tonight we are heading over to a friend’s for the hockey game. I think it’s takeout – sandwiches.

Tomorrow night is Ma Po Tofu w/minced pork and stir fry sugar peas and jasmine rice.

Sometime this week probably grilled salmon with stir fry baby bok choy and jasmine rice.

YUM! I love love love burgers, and sweet potato fries.

Tonight I am making stuffed peppers (big green peppers stuffed with lean ground beef, tomatoes, rice, and onion all with a delicious sauce!)
