Over the weekend I made a clam chowder which is one of my go-to dinners. It was delicious, as usual! I have no idea what to make tonight though…
I’m not cooking tonight since I’m going to meet my mom after work but last night I made baked tilapia and tomorrow I’m attempting to cook a rump roast.
Chicken….thing….with corn…probably…..and a salad…or something…….
I’m not cooking tonight but last night I made chicken lasagna rollups and they were amazing. My husbands favorite dish!
Grilled lemon pepper chicken with rice and baked asparagus
Ohhh…frozen dinner (Kashi black bean enchilada) since I’m going to Vegas tomorrow. I don’t want to make anything that would end up sitting in my fridge for almost a week! Oh, but I’m going to throw in a few glasses of wine with that while I pack.
Baked “fried” buttermilk chicken and peas for a side – with a big glass of white wine 🙂
I’m making tomato tortellini soup. It is AMAZING and super easy!

I usually add a can of diced tomatoes to the mix instead of the sun dried tomatoes.
Three cheese tortelloni with cajun spiced chicken, roma tomatoes and green onion. Red pepper alfredo for the sauce.
Grilled salmon with mango salsa, and some asparagus on the side.
We live across from a golf course that has a little restaurant and I’m going to make the hubby stop off and pick up my favorite salad on his way home from work because I’m craving it! It’s got goat cheese and grilled chicken. BUT when I wanna cook a treat for Darling Husband I make his favorite, Chicken Piccatta…and it’s SO easy and he RAVES about it! (just google a recipe they’re all more or less the same)
I am finally getting around to the corned beef and cabbage we were supposed to make for st patricks day lol
