Miss Tattoo’s post inspired me to cook some up tonight! I am actually making two smaller chickens (around 3.5lbs) in hopes that we have some leftovers for salads or sandwiches this week. On the menu tonight is Engagement Chicken, roasted red potatoes, sauteed garlic asparagus and homemade chocolate cream pie. Man, if this doesn’t work, I don’t know what will 😉
I will let you know how it turns out, but so far I have had the same problem in not being able to fit 2 lemons inside the cavity. I took the 2nd one and sliced it almost the whole way through, twisted it, and put in on the top. We’ll see!
Did anybody else that made this, not eat the skin? Was it still lemoney?

I made E chicken in Sept and it was great! Such a simple receipe for so much flavour – the chicken meat itself wasnt too lemony but was very moist! BF loved it (I made a post – not sure how to link it). I had to keep stopping myself from calling it e chicken!! lol he didnt know what he was eating! hehehe.
The skin was the best part and I dont normally eat chicken skin! Super crispy!
Oh and your dessert sounds awesome!!! 🙂

We were married in Manitou Springs. I was thinking about Beaver Creek for a winter wedding though.

Beaver Creek is beautiful! I’ve never been to Manitou Springs.
lol I wanted to call it that, too. I thought it turned out so well! I definitely will be making it again, but hopefully not in the same context. More like an “anniversary” chicken.

I made E-chicken, and 2 months later I had a ring on my finger! After we were engaged I told him it was e-chicken and he laughed and laughed. I hope it brings you luck!

hahaha I was thinking the same thing. I’m dying to try this recipe because of how everyone raves about it. But I don’t want the magic to backfire and undo my engagement….lol kidding.

I used 1 cup of lemon juice and could only fit one lemon into the chicken. Perhaps I bought large lemons. They were all once size! lol
I don’t know how much salt and pepper I used. We have grinders so I just grounded the salt and pepper into a bowl and went from there. It was enough to cover the inside and outside of it.
I had a 4 pound bird and it took about 80 minutes to cook.
