Well before I saw hot and humid I thought s’mores for desert would be fun.

Assuming it’s a smaller affair, what about hiring a food truck?

Are there any local bbq restaurants that will cater? They don’t have to be explicitly catering companies. I know Dickies BBQ caters (not sure if this chain is in the Northeast or not), and its always good. I would hesitate to do any of the food yourself. You run the risk of food poisoning and food sitting out too long. That can obviously happen with a caterer too, but it’s less likely.

Ariana1 :  as someone who self-catered, avoid it if you’re having more than 30 guests. There were 36 including ourselves and any more would have been overwhelming. And figure out how you plan to clean up too. We didn’t think that part through, but luckily my mom and aunt volunteered while we were busy.

We grilled tri tip with potatoes (had to finish those off in an oven), garlic bread and a salad bar. For the rehearsal we had a taco salad bar – the meat I made and froze ahead, fresh pico and veggies, localish tortillas, etc. relatively quick to get going and delicious. Lots of compliments. Just bear in mind we also had access to an industrial fridge and served indoors. No one wants 2-hours in the sun sour cream!

My niece had Texas Roadhouse cater her New England wedding and the food was great.

Ariana1 :  Like brisket or pulled pork from an authentic place.

I’d avoid self catering at ALL COSTS. Many people do not have the capacity to feed large groups safely and effectively.
