I did bouquets and bouts before.  I would suggest wrapping the stems of the flowers with green floral tape before you wrap with ribbon.  

To get the tie at the base of the bouts flower I started with a decent length ribbon (maybe a foot to make it easy to wrap and tie) and placed the middle of the ribbon on the bottom of the bouts stem.  I then wrapped the ribbon (on both sides) towards the back, crisscrossed then come to the front.  Keep wrapping until you get to the top.  Then tie a not or bow, trip tails.

As for the bouquet.  Once the floral tape is holding the flowers in place you can wrap with ribbon.  I did my own bouquet wrap.  I started with one end of the ribbon and pinned it into the stems at the top.  I then wrapped around enough times to cover the pin (as my ribbon was shear) and then continued down the handle.  I didn’t do a criss cross patter as I just like the wrap better.  Once I was at the bottom I cut my ribbon to end where I wanted my row os pearls.  I tucked the cut edge under the ribbon and pinned the seam with a pin.  I then pinned all the way up in a line (up and into the stems so it wouldn’t poke out).  One other tip on getting clean straight ends…use a clean sharp hack saw instead of scissors once it’s tied.

You can kinda see the clean fold at the bottom as I had spaces inbetween pins.  In retrospect maybe I should have started at the bottom and worked to the top….but it was perfect for me.
