I would not recommend freezing. I would bake your cupcakes 2 days out, and ice them the day before. Let your cupcakes sit out for a few hours after cooling off so the tops dry out a little otherwise I find the tops of them start to come off because they’re so lovely and moist.

For icing, I highly recommend using Italian buttercream, it’s worlds better than a regular buttercream, but requires slightly more effort. Please please please be very careful on step #3. I wasn’t paying attention and ended up spraying myself with the hot syrup and got 2nd degree burns on Saturday while making cupcakes for a friend’s babyshower 🙁  I’ve made the icing 100 times before without incident, I just literally wasn’t paying enough attention and it was my own stupid fault. Totally worth it though, it’s the best icing I’ve ever made 😉 Substitute out the Grand Marnier in that recipe for any other kind of flavouring, just add to taste. I often use seedless raspberry jam which is SOOOOO good on chocolate cupcakes. I also like to use the Tazo chai concentrate from Starbucks for chai icing. SOOOOO delicious. For a base, I love this vanilla bean cupcake recipe, it’s the best vanilla I’ve ever made 🙂  I also really like the Martha Stewart Cupcakes book for flavours, the devil’s food recipe in that book is delicious!

I sort of wish I had made my own cake and cupcakes for the wedding. I liked what my bakery did, but it wasn’t exactly what I had in my head which was unfortunate. I think I could have made equally as good or better honestly.

We’re doing cupcakes ourselves!  Here is a link that I just posted two weeks ago asking for flavors.  Maybe it will give you some ideas!

I must say, the creme filled, devils food with oreo icing was completely OMG!  I’ve already had calls from the people we let sample asking if I would make cupcakes for 2 birthdays and a housewarming party! Good luck!

You can absolutely freeze them. Just wrap them super tight in cling wrap & then let them thaw out the day before at room temp.

We’re doing our cupcakes also! Well, my friend is but I’m helping and I found the recipe. Here’s the recipe we’re using whip them a lot and use good quality ingrediants and they’ll be the best you’ve ever tasted!

We just did a taste test on them and they turned out great. After a day or two they do not taste good though and freezing doesn’t work well for cupcakes. Make them the day before and have someone else frost them the day of.

You’ve got to make the frosting though. Store frosting is horrible!

Oh I will SO be watching this thread. I’ve been around the county buying sample cupcakes and they’re routinely crap. Honestly, almost every one is hard enough to bounce. Ridiculous. The only ones that weren’t were unfortunately from a supplier that only does vanilla cakes with 4 different icings. I would like 4 different types of actual cupcakes.

I’m def considering the DIY route… I know I can make better than the ones I’ve tried!

As an aside, anybody got ideas for transporting DIY cupcakes to your venue? This is my biggest worry about it…

@aunt pol: If you can find a baking wholesale supply shop, or box store, you can typically find boxes that come with cupcake inserts that should hold 2 dozen cupcakes.

I’ll second the cupcake courier!  It’s an awesome product and will ensure your cupcakes arrive fresh and without being messed up in transit. 

Check Amazon too…after getting cupcakes for a bridal shower from a local bakery in three of these beauties I set out to find one for myself and that is the site I finally ended up using.
