I used astroemeria which I got from the local florist.  With some serious bargaining and promise to pay with cash, I paid about $1 per stem.  They are pretty fragile and I had a few that were bruise and looked kinda sad so I ended up not being to use them.  But overall I was happy with them.  They needed a few days to come to life though so I would definitely get them several days in advance.  Here is my centerpiece:

I’m using roses and my day already means markup for that (would be way cheaper if it wasn’t so close to Valentine’s Day) but I’m still only paying 1.78 a stem which can’t be beat.

We had mostly zinnias with some black-eyed susan, dahlias, and some other ones I don’t know the names of, with some ferns. My dad grew them all!

I bought 125 roses from Sam’s Club for $105 including tax and shipping. So less than $1 per stem.

@jwdesiree: I bought our centerpiece flowers (carnations) from Sam’s club. $75 for 150. So about .50 cents a stem.

My local Costco had 24 stem bunches of roses for about $17, I think the alstroemeria were 10 to a bunch and cost around $9-$10.  I also purchased peony roses from fiftyflowers for about $2.50 per stem (including shipping).
