Love the Protea. It’s very interesting and different! I think I don’t like the 2 count though. It doesn’t seem balanced or something? I think it’s always good to do odd numbers. But due to the size of the flowers, 3 would be overkill I think. It might be better to have 1 and keep it simple with few greens and a really nice wrap, like this first pic (If you are going with a more vintage look). The flower is dramatic enough to be on its own. Or maybe do 1 and with some additional flowers/berries like these other shots. I like branching in bouquets myself, too, which is seen in a lot of the pics. I used the idea for my own bridesmaids bouquets. Adds another interesting element! If you’re wedding look is more modern, I LOVE the last 2 pics (which are the same bouquet). With the curly willow type branching. I think that would look awesome! It looks easy to put together. The hardest part would probably be the branching and getting it in there. But I think it would still look nice without that part, too!

They are some type of green berry, but I’m not sure what kind! They do not look like green Hypericum berries. But Hypericum berries are pretty easy to get, I think. While googling green berries I came across Berzillia (also saw it spelled Berzelia) berries and I think that might be it. I have no idea how expensive they are though. You could find alternatives like Green Hypericum. In the other picture several above that has berries, it looks like they are Silver Brunia berries, which are a silvery color.
