I don’t know about the peonies, but you can do the roses 2 days before. If you want to give yourself more time or are going to store the roses in a warm location request unopened buds shipped to you.

I know peonies are more sensitive. You should ask your supplier what they expect their life span to be.

No matter what you use remember to change the water daily for best life.

Peonies tend to be super delicate, so I wouldn’t want to do them more than a day before (though i would check with a florist to see what they say about the longevity of the flowers)

Roses tend to be more hearty so 2-3days before (as long as you keep them cool watered & spritzed with something like this).

have you looked at youtube for flower arranging? They have lots of cool videos that are really helpful. Can’t you just do them the morning of??? They make it look really easy online, like it only takes a few minutes

As long as you keep them in a cool place (like a basement), you should be ok to do them 2 nights before if you HAVE to. As long as you make sure you let them drink up before you arrange them and keep the water level high for them. As far as the bouquets, keep them in water, and wrap them in ribbon the day of. I would omit the peonies since they will probably wilt or brown personally. The roses will probably be fine with two days if you can keep them cool and dim. You also want to make sure you can keep them all standing, and leave the outer petals on until the day of the wedding to protect the inner core of the rose. Then you can snip those off the day of so they look fresh.
