I have a summer rice salad recipe that I like to make for BBQs that’s a simple ahead of time side dish. Basically it’s rice, chopped cucumber, chopped tomatoes and italian dressing. It’s best served chilled, but a simple set up of two bowls with ice in-between will do the trick. PM me if you want the recipe.

And, from a coordination stand point, I would have one family member head up the food for you. We are going a similar route with the shower (feeding lunch for about 60+) and my step-mom is organizing who is bringing what and who is setting up/tearing down. I could not imagine trying to coordinate that myself with everything else going on that day!

You could do a beans salad:

chick peas, red and white beans with cucumber, red pepper, onion, corn, and feta cheese.  I usually make my own dressing (olive oil, balsamic vinegar and dijon mustard); but it also tastes amazing with greek salad dressing, in which case you could add black olives to your salad.

It’s very tasty, healthy, and fast to make!

Ooh! And I thought of this post this weekend, my girlfriend made a little appetizer with a thick slice of cucumber (cut out a small dip in the middle, about half the seeds), a dollop of ranch dressing and half a cherry tomato on top. Very cute! Very easy!
