We are in the process of gathering addresses to mail our Save-The-Date Cards and I realize I don’t know–do you put “and guest” on a Save the Date if you are planning on inviting the person with an unspecified guest? Or do you save that for the invitations?

If it’s an unspecified guest like you stated, then you do not need to include that on the STD, just the formal invite. Now if your friend is living with an SO, then you would want to include the guest’s name below that of said friend.
When you do send your invites though, it’s a nice touch to try and find out the guest’s name rather than putting “and guest.”

@vaness13181: Thanks for the advice! We were planning on putting names for anyone who we are inviting with an SO, but in the case of certain single relatives or the bridal party who would be invited with unspecified guests, I wasn’t sure if it was necessary to include.

You don’t have to put it on the Save-The-Date Cards, I would save that for the invites.
