dianesparty :  Sounds good! I’m not really sure what hash brown casserole is, but roasted potatoes sound like a good option. You could even do tri color potatoes–red, white and sweet potatoes–to make it a little fancier 🙂

This sounds lovely. 

IA with the suggestions given for vegetarians. If you’re making Italian chicken into sandwiches, perhaps something comparable for the vegetarians- grilled peppers and eggplant sauteed in olive oil and garlic served on a roll (like a muffuletta in keeping with the theme). 

I also agree with your choice of green beans. Agree there is a world of difference btw canned green beans (ugh, I had these as a child too! lol why I don’t know) and fresh green beans prepared nicely. Love this choice. 

I don’t know what a hash brown casserole is but I like trying new things so I’d be happy to check out something unfamiliar to me. 

And definitely pie over cake (now I’m thinking why didn’t we have pie?!?! My Darling Husband prefers pie too)

The one thing I’d worry about is taking on the self-catering. I love to cook, but I wouldn’t have wanted to cook the evening before/ morning of my own wedding. I really did enjoy time the morning of getting ready, feeling pampered, spending time with wedding party etc. Normally I’m happy cooking up a feast for friends and family- but not on the day when I want to focus on getting ready/ looking my best. Plus it’ll be a long day for you, you don’t want to be worn out at your own reception. But I guess it’s do-able if you have lots of competent help.

Maybe some meatballs or sausages in red sauce??  Don’t forget the really good italian bread! 🙂

I personally think the meatless pasta is fine for vegetarians.  There will be salad, beans and potatoes.

letmebeeme :  It wasn’t long winded (ha I can definitely do long winded but this one ain’t it), I had several on topic things to say to OP. If it was too taxing for your brain, feel free to jog on by rather than slowing down to read it.

BUT I do understand that choosing to focus on the length of a previous on-topic post of mine is simply a rather obvious attempt to sidestep my comment that was directed at you- because you know I’m right and you’re pissy that I pointed out your hypocrisy. For you to say that vegetarians are fine with just pasta in the same breath you say you’d like meatballs added to your chicken and pasta….lol, well who wouldn’t roll their eyes at that?  I will continue to roll my eyes at hypocrisy, whether it’s immature or not.

I think this sounds great! I’m big on having lots of choices to appease just about everyone without having to ask questions or make a fuss. I have to eat gluten-free. I hate being a pain and I’m self-conscious about it, and I’d thoroughly enjoy what you’re offering here while discreetly omitting the things I can’t eat.

I would just do your best to choose items that you can do ahead of time. I agree with RobbieAndJuliahaha that you should enjoy your wedding morning and not have to be cooking. I have the luxury of being off work the week of the wedding, and even though we’re having the main dishes catered, I can do my own fruit, veggie and cheese trays a day or two ahead to save money. If I change my mind, we can always spend a little more and grab those at the local mega-supermarket. (ETA – I love cooking and food prep. It’s my hobby. I work in food service and actually love my job.)

I’m going to be climbing the walls, so I kind of want to keep my hands busy.

I LOVE green beans in all forms. I even eat the French-style canned green beans with the little onions and peppers straight from the can with a fork. I’m weird, I know.

I think your menu is good but you should add another vegetable and some fruit for dessert. Also, I would go with roasted potatoes instead of hash browns.

The menu sounds good. I just looked up what hash brown casserole is – yum! Definitely do that. What sort of pie are you making?
