Does your caterer calculate the price charged per head according to the highest entree selection availible or do they calculate it individiaully per entree choice. Let me show a couple of examples to illustrate what I am asking:
(1) Highest selection availibe: If filet mignon is $140 and chicken is $110 per head you are charged $140 per head for each person, even those who order chicken because you are now in the highest bracket due to having filet mignon as a choice
(2) Cost calaculated based on individual entree choice: You are billed $140 for those who select filet mignon and $110 for those who select chicken

#2 for us. We offered a beef and chicken entree. The chicken was about $10 cheaper than the beef so our final bill reflected X amount of beef @ $0000.00 and X amount of chicken @ $0000.00.
#1 doesn’t really make any sense to me. Why would I pay more for some of my guests entrees if I don’t have to. I don’t think I would have booked a caterer who billed like that.

My caterer bills per entree selection (the meats we chose were the same price, but the vegetarian option was significantly cheaper and that wil be reflected in our bill). I would have negotiated if they wanted the price to be the highest possible price for every guest, regardless of choice!

I wouldn’t book a caterer who didn’t charge me for EXACTLY what I got. I don’t understand #1 at all since you typically get a meal choice response from people with their RSVPs, therefore you have a head count for each offering to submit to the caterer well ahead of time. It’s not like they’re making 140 chicken and 140 beef for 140 people just to have both options available at dinner time.
Buffets are different – we’re paying a flat rate per head to have 2 options available, but that’s different.

Ours is a package deal – X for the entree, tent rentals, a cheese display, room rental etc. It’s cheaper than normal because it’s a holiday weekend (odd, I know, but apparently holiday weekend slots are harder to fill). We have 2 of 3 entree choices from it and the price doesn’t change based on whether we get the higher priced/lower priced option. That said, we’re going with the higher priced ones. We may try to offer a 3rd vegetarian option which would be cheaper, but we’ll still be charged the same per person price.
Most places I saw charged an extra fee to offer 2 options plus a vegetarian option. So they might pay the lower price, but $2-5 per person was tacked on to the dinner price for the extra options.

I am actually being charged per the actual entree ordered. But I was surprised by that because for the most part everywhere I have seen was not that way. Even a shower I hosted recently was based off the highest price meal choice. I was offering either a chicken or steak salad. Not even thinking about the fact that a shower was all women who were going to order mostly chicken. I ended up with only 2 steak salads but had to pay the higher price for all of the meals.

My place we are offering filet mignon and chicken and a veggie selection. When we give our final head count and tell them how many people are having what that is what they will base the price on. Ive never heard of people getting charged the highest amount regardless of who had what
