We are actually going to do shirley temples (7-up, cherry grenadine syrup and a cherry).  Cheap and oh so tasty. 😉

Ginger Ale! It’s fizzy, festive, tasty, and CHEAP! We’re toasting with ginger ale for everyone at the wedding since we won’t be serving alcohol. (I am Mormon, like Mrs. Avocado)

As someone who doesn’t drink, I think it would be a wonderful gesture to provide sparkling grape juice. It might seem like an unnecessary expense, but it will be appreciated 🙂

Celebrate the toast at the reception with tasty drinks everyone will enjoy. Here are some tips: Be sure to serve the drinks in pretty, holiday glasses. Use the juice from each of the recipes to make "ice" cubes: keep your beverages cold without diluting them and, very important! garnish with fresh fruit slices, cherries, and mint. Good look!

As someone who worked catering for weddings for years and years I can honestly tell you 90% of the champagne gets tossed after the toast – no one drinks it! So if you’re looking to save some $$, just have everyone toast with whatever they have – soda, water, wine, etc. However, that said, if you’re really set on serving champagne, a sparking cider would be a lovely touch for your non drinking guests. Have you thought about how to distribute the different drinks though? Usually the serving team pours the champagne just as everyone is coming in from the cocktail hour, and it might be confusing to determine who gets champagne and who doesn’t…

I’m not much of a drinker either and Martinelli’s is great.  I’m sure they sell it at Costco or Smart & Final for a decent price.
