Julia Pfeiffer Burns is very pretty.  I don’t know if it’s possible to get down to the beach but if it is, it’d be great.  And it’s got small redwoods elsewhere so you could have forest and beach photos.  Honestly though you can’t go wrong at Big Sur, it’s just that it might be crowded.  No other useful advice, I’ve just driven through before, so I don’t know any other places/rules/etc.

Big Sur is beautiful but they’ve had a lot of issues with Highway 1 closures due to mudslides. They closed it again a couple months ago after reopening it after months of repair, because of the winter rainstorms. You should be fine but depending on the direction you’re coming from travel into Big Sur might be a lot longer than you’re anticipating.
