I would keep the rhyming scheme consistent: either rhyme every other line (ABAB) or every two lines (AABB), not a mix of both.

Your rhyme scheme wobbles from ABCB to DDEE.  It kind of separates the two halves – that’s not necessarily wrong, or bad, but it does kind f make it feel longer, and more complicated.

You could fix it easily by just swapping and adjusting lines 6 and 7:

It’s easy to be busy,

And forget the little things in life.

One day we stopped to remember,

We couldn’t wait to be Husband and Wife.

Though you are miles apart

You were with us in thought;

So with love, from our hearts

When we eloped and tied the knot.

Or maybe something like:

Life can get so jumbled,

So busy, and complex

We thought that something humble

Would suit us both the best.

And so we joined our life,

Without so much ado.

Now, Husband and Wife,

We share, our happiness with you.

@ralessio: Why don’t you just send a simple but classy wedding announcement instead? No “poem” needed, and I’m quite sure most people would not expect one.
