If you want to assign specific seats you will either need to use place cards, or perhaps place their favor at their place setting with their name on it.

If you just need to be able to indicate your guests’ meal choice to the wait staff, you can color code your escort cards or attach a small stamp, jewel or ribbon that indicates their choice of entree.

I diuse same thing! Got the escort tags from Etsy, keys from ebay (I got actual antique keys, would have been much cheaper to get replicas and I doubt anyone would have noticed.) I had a calligrapher write the names on the tags, then stamped the table names. At the tables, I used plain ecru place cards bought online and printed  at home using a pretty font (they looked great and were about $10 for 100 cards). Have fun, they will be gorgeous!
