Formentera is gorgeous for beach! Especially if you enjoy a bit of yacht spotting and if you rent a boat you can just swim into shore:

I loved being in northern Croatia, but the beaches are rocky, so just be aware. There is sand further south.

France by Montpellier is nice too, I loved Espiguette beach, but there is no hotel on the beach, you have to drive/walk out. But the sand is nice and Espiguette in particular is huge, so not crowded. I would avoid the resort beaches right next to Montpellier. You can easily get to the lavender fields from this area too, so that is amazing in July/August. 

Ireland actually has some great beaches (Inch Beach in particular) where you can surf and sunbathe, but it isn’t overwhelmingly hot. Plus, Dingle and the Dingle Peninsula are fantastic and not far from the Cliffs of Moher, so you can mix some other destinations in as well (Blarney Stone, Killarney NP). Pro-tip: do the Dingle Peninsula drive instead of the Ring of Kerry. Much the same scenery without the massive tourist traffic/buses.

Greece has some great resorts and you can take day trips to Turkey. Needless to say, the history is amazing. You could also go to Italy. Spain is always beautiful

I agree check into Croatia.  I dont think many would look there but we found it very affordable.  We also loved Greece and it is very affordable right now.  We actually looked at getting married in Santorini but chose to have a traditional wedding.  We got engaged in Venice and absolutely loved all of Italy but not sure that would be a cheaper option.
