I think that since you mention the exotic meats will be expensive for your guests to all have some, why not narrow it down to your favorite meat (like bison) and that way allow your guests to enjoy it along with chicken or beef and then change up an app to reflect the more “wild” aspect of your theme?

I’d be fine offering a choice of any 2 kabobs of any flavor.
Even if someone chose 2 of the more expensive meats, I’m sure someone else would choose 2 of the chicken!
<b> So, how would I word that on the RSVP card? “Please select two entree options per guest”? If I am serving these family style or buffet style, is it still okay to have people designate a choice so I can get an estimate of what people will eat (even if they wind up forgetting/changing their mind)? </b>

I’m doing some kind of mac and cheese (either truffle mac, jalapeno or poblano mac, but some kind of gussied up mac n cheese) and then baked potaoes (either mini twice baked or mini baked w/ a selection of toppings) and salad with a choice of dressings.

I wouldn’t serve rabbit, as many people keep them as pets some may find it offensive. The other choices sound interesting though and I’m sure people would enjoy them.

I love bison and elk! I would totally be excited if I saw those on a menu at a wedding. As far as rabbits, I wouldn’t be terribly excited about that. We have this little guy at our house, and I would think of him. 🙁
As far as wording goes, I think the “Please select two entrees of your choice” is a good plan. Short, sweet, and to the point.

I would say, “Please select two kebabs.” Adding “of your choice” is redundant, and referring to them as “entrees” is a bit confusing, since the 2 together will comprise each guest’s entree.

I wouldn’t eat any of them, would prefer chicken or beef.
However, depends on where you from.. elk could be considered normal. My fiance is from california and it’s nothing new to eat elk to him!

@kateisstoned: Can you offer your creative meats, as well as a vegetarian/ veggie cabobs for those hesitant to eat such things? While I think most people will really like your creative choices, as someone that doesn’t eat red meat, I’d hope for the option of just a veggie cabob. You wouldn’t have to spend more money, just instead of meat, on the veggie cabobs put double portions of the peppers, onions, and mushrooms that you have garnishing the meat on the other cabobs. As a polite guest, never in a million years would I tell the bride that I can’t eat the choices she is providing. Thus, wiithout a veggie cabob option, I’d end up choosing one of the meat cabobs on the RSVP to just go with the flow, never eating a bite of it at the wedding, and filling up on the side items. This works and I have subtly done it before without any hosts noticing, but it’s a shame because it’s wasting food and money.

It’s the sort of thing that if someone I knew took something exotic, I might try a bite; however, I’d definitely select something familiar for myself.

I love bison, so I would definitely order that. Never had elk before and while I probably wouldn’t choose it as my option I would love to try a bit from someone else!

I would honestly try anything once, its amazing to have the opportunity to have something new. That being said, if you have guests who are more conservative with their food choices then bison will be your best bet. It is a gamier style meat but more akin to a good quality grass-fed beef. Elk is a bit more gamier. Rabbit is a very tender meat so I would be cautious about having it in a sausage.

I’ve never had bison, elk or antelope. However, I’ve eaten rabbit many times during my life, and I wouldn’t really say it was exotic at all. I’m thinking of shooting some with an air gun and making sandwiches from them for my evening buffet, actually.
I’ve eaten venison many times as well…I wanted to serve venison with blackberry sauce as my main, but I was over-ruled in favour of duck with cherries and shallots.
So yes, naturally I would try it all. In fact, I’m surprised that so many people would be unwilling to give it a go, seeing as they are all very healthy meats. I wonder how those people would survive, if they travelled a lot! I am also always surprised by some of the menus on here where people have mashed potato bars, or serve chips and burgers… I wouldn’t touch any of that stuff with a barge pole.

@Ettalie: Yes, you make a good point, actually… I didn’t think about that. How would you have rabbit in a sausage? I find it tastes better when paired with with more delicate flavours…
