My guess would be Satin. (I dont know what Silk Essence is?) but I wouldn’t really consider any of those a “flowy” fabric.

When I think flowy, I think of fabrics like Chiffon.

Maybe it will help if you take a look at dresses already made in those fabrics. Websites that let you filter by fabric are good for that.

For example… here are some taffeta dresses. http://www.weddingshoppeinc.com/cr/Bridesmaid-Dresses/3200?Narrow0=Taffeta_Fabric_59_000000009_5

    Dupioni Silk http://www.weddingshoppeinc.com/cr/Bridesmaid-Dresses/3200?Narrow0=Dupion+Silk_Fabric_22325_000000024_5&Narrow1=Dupioni_Fabric_38634_000000046_5

Probably Satin but I’m not familar with Silk Essence. Honestly, I wouldn’t consider any of those “flowy”. Chiffon is flowy.

Take a look at dresses already made in those fabric options to see which look you like.
