Out wedding is in October, with a 5pm ceremony time. We are definitly a low budget couple, however, we are blessed to come from a family of farmers, so the beef is free!! 🙂 We’re having a kind of small wedding; about 60 people. no DJ, just an ipod for background music, and then a bonfire during/after dinner 🙂 also, we have friends and family casually providing music throughout the evening. Very laid back, casual, fun.
Is Roasted Sliced beef with gravey potatoes and veggies too casual?
What would be a good “second” dish. We would like a chicken or pork option, but are open to a pasta option.

I think that menu sounds fine! If you wanted to add a chicken option, you could do like slow cooked pulled chicken (or pork really). If you wanted a veggie option, you could do something like risotto, which is very fall-appropriate and oh so yummy.

I don’t think what you have planned sounds too casual – it sounds good!
For fall, and pork – I think of maybe stuffed pork chops with cranberries in the stuffing. (You could also do this same stuffing with chicken breast, but I like it better with pork).
Fried apples are always good with pork, and are fall-ish.
For fall pastas, I love butternut squash or pumpkin ravioli – or, if you wanted to have a couple of soups available, butternut squash or pumpkin bisques are yummy too.

Oh the risotto or butternut squash or pumpkin ravioli sound amazing for a fall wedding! I would go with the roast beef and do a veggie option.
