My current favorite is channa masala (chickpea curry). I got the recipe from my best friend’s mom. It involves chopping up some veggies and obtaining a packet of curry from an Indian grocery store, but after that, you’re good to go!

@Beagle – you make it sound so easy! I haven’t attempted it yet, but my mom makes the best pho ever. Hee hee!

This is a new fav from the Weight Watchers recipes (if you’re looking for yummy healthy stuff, weight watchers has great cookbooks).

South Indian Curried Chickpeas

-1 can chickpeas

-1 carrot

-1 cup peas

-1 can stewed tomatoes

-jalapeno pepper

-3 tbsp plain yogurt

Chop the things that need chopping.  Mix everything but the yogurt together in a pot and simmer for about 10-15 minutes.  Stir in yogurt and service with brown basmati rice.  YUM!

Couscous with halved cherry tomatoes and fresh basil, mixed with balsamic vinegar and olive oil, and a light sprinkling of feta cheese (no feta cheese if you’re really being healthy)!  Yummy, and easy and quick to make!
