Bees, summer is just around the corner.
One of my favorite things about summer is amazing, creative salads. Just wanted to know what some of your favorites are. I’m always looking for ideas…. here are some of mine:
South of the Border:
Lettuce, avocado, black bean, corn, tomato, fat free cheddar cheese & a salsa instead of dressing.
Lettuce, Carrots, tomato, cucumber, green pepper, fat free cheddar cheese, banana peppers & low cal french dressing.
Lettuce, grapes, blueberries, dried cranberries, mandarin oranges, soy nuts, feta cheese & light balsamic vinegar dressing.
Can’t wait to hear more good ideas!!!

I love avocado, black olives, hearts of palm, artichokes, roasted red pepper and feta in my salad. With some sort of light vinagrette. MMMMMM!!!
I love love love fresh chunky salads in the summer!

Asian chicken salad: thinly sliced green cabbage, shredded chicken breast, green onions, toasted sesame seeds, toasted almonds with rice vinegar.

Baby Spinach; feta; walnuts; sundried tomatoes; avocado; cucumbers; red peppers; with homemade salad dressing (olive oil, dijon mustard, balsamic vinegar)

i’m obsessed with this salad i’ve been getting lately from a salad place near my office–butter lettuce, carrots, hearts of palm, chick peas, potatoes, and shaved parmesean with balsamic. mmm!

Ok, so we just made the best salad last night for dinner and I was hoping to be able to share it with you all!
Pearlini fresh mozzerella balls
Pan browned pine nuts (better if browned in butter!)
Mandarin orange slices
Sliced hard boiled egg
It was like the most satisfying and delicious dinner EVER! Nutty, sweet, savory and delicious all in one!

I love everything and the kitchen sink in my salad. Otherwise it’s just lettuce =
I had a good one with figs, balsamic vinegar, goat cheese….pretty simple but good.
I also like sliced grapes. Weird i know. and goat cheese. in EVERYTHING

these are amazing! ejs4y8 i LOVE figs in my salad.. I had an amazing one once with figs, roasted walnuts, and goat cheese… and I can’t say I remember the rest of the ingredients because those three things were so amazing!
I’m so excited about all these ideas! Before this thread putters out, I am going to have to write all these down!!!

corgitales & roddybride: You are funny! Ha, it is funny though how some salads can be so bad for you.. do you know that most of the salads at paneras with the dressing are like 700-1000 calories! Yikes!

I made a yummy pasta salad recently.. but i’m not sure that counts!
I think i’m going to copy Mrs DG’s recipe – i like a hearty meal. I’m a growing.. woman after all.

BEETS! I love love love love beets and a salad is sad without them!
We have “salad bar bar” at my office where I tend to toss in everything they offer. My favs are: beets, edamame, sundried tomatoes, corn, peas, cranberries or golden grapes, artichoke hearts, a sprinkle of bleu or goat cheese, and then the usual suspects: carrots, onion, cukes, regular tomato, green peppers…
All topped with balsamic vinaigrette. And croutons=)
