SNOWPEAS.

I cannot emphasize this enough. SNOWPEAS are:

– crunchy

– delicious

– satiating

– healthy

– FUN TO EAT

– bountiful

– a little expensive

I recently discovered making "milkshakes" using sugar free, fat free instant pudding mix….you just add extra milk and ice cubes and blend away…it’s a good fix for that ice cream craving..I have also played around adding extracts which make for a unique blend.  I actually made one using a but of rum and vanilla extract with vanilla pudding mix..came out tasting like eggnog and was super yummy!

Mini bags of popcorn!  And sometimes I spray some "I Can’t Believe It’s Not Butter" into the bag and shake it up.

A snack that feels a lot more indulgent that I like is some peanut butter on a brown rice cake.  I like the Trader Joe’s low fat PB (Better’n Butter) the best.  It’s defatted (whatever that means) but doesn’t have a lot of extra sugar.  But it tastes really peanut-y unlike some other major brands.  It’s not sure high calorie (and you can control that easily by eating half a cake or using less PB). But it’s really satisfying and filling with a nice blend of sweet and salty.
