I’m completely incapable of sleeping on planes (ended up being awake for three days when I went overseas because my internal clock was thrown off so much) and I would still choose the red eye. I don’t get a lot of vacation time and I’d rather be tired in Spain than tired at the airport!

Eh, I’d rather fly overnight to max out vacation time and sleep on plane (as much as possible) but I also would not want to be rushed to get to the airport on time (or risk missing a flight) or be stressed by unexpected events (traffic accident slowing traffic, etc) so to me it all depends on flight times.
What if he did go back to work for a day or two after wedding, and you then took an evening flight (after he was done work) so he got his full 7 days off, you had time to see family, pack for the honeymoon, rest, decompress, relax?

If he had more time, I would be with you on this one. But since he has such a limited amount of time off for the wedding/honeymoon, I would fly out ASAP since it generally takes awhile to fly internationally (assuming you are in the US). You could try and sleep on the plane otherwise if you get there and you are tired, you can sleep a bit and wake up refreshed in a beautiful place! 🙂
