Nona99:   Cowboy caviar (salsa) easy and one of my fav

2 cans black beans drained rinsed

2 cans black eyes peas drained rinsed

2 cans of yellow corn drained rinsed

1 small diced red onion

3-4 celery stalks sliced

3-4 diced bell peppers

1/2 cup cilantro

Marinade: 1 c oil

2 c apple cider vinegar

1 c sugar

.5 tbs salt

.5 tbs  pepper

Combine salsa ingredients in large bowl

combine marinade ingredients on the stove and heat till sugar dissolves. let cool

once marinade is cool pour over salso

marinade overnight and drain the next day

serve with chips or anything!

Dessert:

4.5 cups flour

4 sticks butter room temp

1.5 c brown sugar

2 eggs

2 cups nuts, pecans or walnuts

18 oz. o respberry jam: i used just plain berries, once with cranberrys, once with blueberries, once with frozen raspberries

.5 c oats

.5 c coconut

preheat to 350 grease 9 by 13 in pan

combine flour butter sugars eggs and nuts until ctumbly. if you miz too long it will become cookie dough. but will taste fine 😉

press all but about 2.5 c of the crumbs into the bottom . spread jam or berries (usually add some sugar to berries)

add the cup of oats to the top. . bake for about 35 min. sprinkle coconut over top then return to oven for 20 more min.

i got a lot of raves over this simple bar recipe!

I was a youngin, camping and drunk. cooked some chicken for everyone and didnt wait long enough. i didnt care and started eating the chicken. yeah it wasnt really cooked that well.. at all. but i lived!! hehe my friends gave me shit about eating raw chicken for years! I was almost to embarred to tell you that but hope you got a laugh out of it.
