my guess is because if they’re being photographed you get to see that initial reaction with both bride and groom in frame. or, if the point is to just be able to see each other before, he can have that moment where he’s able to take in the whole outfit and see her walking to him whenever the bride is walking down the aisle later.

I personally like the look on the brides face as she walking up to him.  Almost like you can feel the tension building too in the ones where the groom KNOWS shes coming up behind him.

@bells: it’s so it doesn’t mimic the aisle and so that you can get both of their reactions in one photograph
