I was just curious to hear what kind of flavors people were doing for their wedding cakes. I have found the design I like, I know I DO NOT want fondont, but unsure of flavors. Any suggestions??

We are having a 3-tier cake….
The bottom layer is a vanilla flavour, the second his a duncan hines chocolate because that is my most favourite type of cake and the top layer is a gluten free vanilla for our celiac guests. I don’t know what the fillers will be… they are a surprise (my girlfriend is making our cake)… I’m like you and really dislike fondant, but it adds such a pro look. She is putting buttercream underneath the marshmellow fondant, which tastes much better then the other stuff!
I don’t know for sure, but I’m leaning toward a chocolate cake with chocolate ganache filling and white chocolate ganache frosting. Although that is a lot of chocolate. 🙂
We are doing cupcakes and have 5 different flavors planned.
Boston Cream Pie cupcake (we are from MA)
Spice cake with a maple butter cream frosting (it’s a VT wedding…)
Chocolate cake with a raspberry butter cream frosting
Chocolate cake with a white frosting (not butter cream…but don’t know how to describe it…)
White cake with a bailey’s silk mousse frosting (My FAV!)
I am thinking about adding one more…like a peanut butter and jelly cupcake, with white cake, a raspberry or strawberry filling and a peanut butter frosting….
We are also having a friend make our “cutting” cake which will be two tiers, of white cake with some sort of white frosting.
Groom’s cake will be brown sugar banana with cream cheese frosting
Bottom tier: white with raspberry filling with white butter cream (NO fondant)
Top two tiers: chocolate fudge with white butter cream.
We wanted to do a carrot cake layer, but we did an informal poll of our guests, and none of them said they’d choose the carrot.
We are having an hazelnut cake with nutella filling and vanilla buttercream. we are having fondant on our cake, but the fondant our baker uses/makes is deliscious! it just melts in your mouth.
Well mine will be 3 teirs. base is marble (vanilla and choc swirl) with rasberry and rasberry mousse fillings. Middle teir is marble (vanilla and rasberry swirl) with lemon and lemon mousse fillings. The top is ours to take home and is choc cake with strawberry and cheescake filling (our fav)! It will have a a thin layer of buttercream on top then fondant to cover it all! We decided to make it a little unique so we went with a petal shape instead of round, square etc. For decorations we’re using fresh flowers. Depending on how u want the overall look, u might want to give fondant a second chance. It gives the cake a beautiful, sleek finish. Whatever u decide, I wish u luck!
