Fi and I are going low-carb, and I found the coolest thing EVER this weekend… everyone talks about how good flax seed meal is, and I finally jumped on the bandwagon. I mixed it with organic gluten flour (only 6g carbs per 1/4 cup) and some spices, and made fried chicken paillards. Soooooo good!
Does anyone else use flax seed meal? How do you incorporate it into your diet?

No problem! Here’s what I did:
1 large boneless skinless chicken breast, cut into 3 portions and pounded into paillards
1 egg, beaten with 1 tbsp water
Coating, mix together on a shallow plate:
1/4 cup gluten flour
1/4 cup flaxseed meal
salt, pepper, garlic powder, and cayenne pepper to taste
Dredge each chicken paillard into the eggwash and then the coating mixture. Over medium-high heat, melt a little butter or use some nonstick spray. Cook the chicken for about 3 minutes on each side, until done.

Oh I love this idea! I sprinkle a little in my oatmeal in the morning but am looking for other ways to get it in my diet. Also, just an FYI, one of my gf’s told me that the owner of the health food store she buys her flaxseed told her to keep it in the freezer b/c she let it sit un a cupboard for about 4 months and one day she went to use it and it had some sort of worms in it, ewww! I don’t go through mine very fast either so now its sits in the freezer just to be safe 😉
Sometimes I can find flaxseed meal mixed with wild blueberries too.

@nickels: Good tip–I keep all my flour-type stuff in the freezer. Poor Fi has learned to live with it.
I googled a recipe for flax seed meal focaccia… I can’t wait to make it tonight! I’ll keep you posted!
