Hmm. I had an all white/ivory bouquet and I loved it! I don’t feel like it disappeared at all.

You could include more greens if you’re really worried (maybe like a collar of leaves?), but I don’t think you have to worry about it… you’ll be able to see the flowers. 🙂

Would you consider adding a subtle accent color?  For example, in the second picture you posted, the maids have very pale pink and ivory bouquets (which goes great with brown!) and they seem to stand out a little better than the white.  You could also do a pale peach or lavender with brown.

Maybe if you added some greens around the outside to define the edges of the bouquet it would stand out more.
