ooh I make these a lot with leftover squashes! 

I like using 2% greek yogurt in mine to help bind and an egg sometimes.

Parm is really good in them!

Also try them with shredded sweet potato. 

Its a great way to use up little bits of leftover stuff. I have thrown red pepper in there.

Top with a garlic aioli! so tasty
