@musician32992:  just cube up the chicken into roughly 1″ pieces. i’d start cooking the onions first, and once they’re soft add the chicken and cook just until there is no more pink. then add everything else and simmer 15 mins- the chicken will be done in that time.

I would still cook the onions second.  Chicken takes longer to cook than the sausage would.  You may want to add a touch more oil, and likely some salt as the chicken won’t have the punch that the sausage would have.

I think it’d be good!  Like PP I would just cube the chicken into smaller, bite sized pieces.  Pretty much just follow the recipe, but the chicken might need more than 4 min.  I think it’d be ok to cook the onions and chicken together.
