I don’t bake very often, but when you can microwave it, I think I might start doing it a little more often!  I’m already excited to try one with the vanilla extract, and one with coconut extract.  I did that substitution once for chocolate chiip cookies and they were tasty!

I hope no one’s disappointed with the results –  we do this from time to time for my daughter (because she can do it herself) and it’s not… very yummy. Although that one looks a heck of a lot nicer than the ones my kiddo comes up with :p

Yum. I’m trying to think if I can adapt this into a low fat version?

4 tablespoons flour
4 tablespoons sweetner
2 tablespoons low fat/sugar free hot chocolate powder
1 egg white
3 tablespoons skimmed milk
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

What do you reckon?

This is a VEGAN mug cake – no egg needed!
And only 3 minutes!

Chocolate Mug Cake – serves 1

4 tbsp white whole wheat flour

2 tbsp brown sugar

2 tbsp unsweetened cocoa

1/4 tsp baking powder

3 tbsp nondairy milk

¼+ cup unsweetened applesauce

vanilla extract

dash cinnamon

2-3 tbsp vegan chocolate chips

In a small bowl, whisk flour, sugar, cocoa, baking powder and cinnamon together, set aside. For a really sweet cake, add more sugar. In another small bowl, whisk ¼ cup applesauce, nondairy milk, and a drop or two of vanilla extract together. Pour wet into dry, then add chips, stirring to combine.

Add another 1-2 tbsp of applesauce, until the batter is wet and resembles regular cake batter. Pour batter into a coffee cup, and microwave for three minutes (at 1000 watts – if your microwave is weaker or stronger, please adjust accordingly).

My diet says no, but my eyes say yes. Of course, I have a recipe for 0 minute chocolate cake which is far more dangerous, it’s called Husband Who Bakes.
