Today my husband made a Swiss roll. Taking into consideration he had barely baked in his life and he had to toss two batches of burnt but uncooked banana bread from 6 bananas the other day, he improved so much! He was like there wasn’t any milk in the recipe so I thought what kind of cake doesn’t have milk and added 1 big cup. Haha

Anyhow, swiss roll turned out fabulous.

whitepeacock :  whaaaaaaaaat?? Can you share your secret? Please share the recipe and icing recipe. Hubby’s bday isnt for awhile but if I can make a cake like this he’d be so impressed!!!

So I just came to this thread to browse and now I’m super jealous!!!

I LOVE to bake, but every store in my area is sold out of baking powder, yeast and brown sugar. Substitutions (for example cream of tartar for baking powder) are also sold out. Every recipe I want to try would require either several subs or cant be made 🙁

I attempted empanadas yesterday but used two subs for my dough which was clearly one too many and they didn’t turn out well, baking fail!!

I had a crack at a marble glaze cake today.  Some lessons learned for next time (better job needed on the buttercream under the glaze, a solid cake would be easier, and colours need to be super saturated) but I’m fairly happy with it as a first attempt!

i don’t have pictures but I’ve made choc chip cookies (hubbys favorite), oatmeal blueberry muffins, blueberry lemon loaf. I love to bake but I don’t have much time wth a 4 month old. I also tried to make pad Thai last night for the first time it turned out pretty good!

I made mini chocolate cake flan today. I’ve never made flan before, so the inside of the flan had a lot of air bubbles instead of being smooth. Regardless of appearance, the taste is wonderful! I know what to do to fix the problem next time though.

These are the changes i made.

Instead of a pound of candied fruit, I used a 435g tin of drained crushed pineapple. 

I used two cups of mixed dried fruit which is sold prepacked in Australia. Its basically a mix of sultanas, raisins, currants and candied lemon and orange peel. 

I substituted the orange juice for the pineapple juice from the tinned pineapple 

I used  half brown sugar and half white sugar instead 

I used roasted pecans for my nuts

I added a few teaspoons of ground cinamon amd ginger powder as well half a teaspoon of ground nutmeg and allspice.

I also added another few tablespoons of flour to compensate for the substitution of pineapple into the recipe.

I hope you post it here if you do end up making it!

I’ve been doing a bake once a week. My mum and FI’s birthdays both happened during Lockdown, so I made cakes for each of them. Don’t live with mum so had to drop it off on her doorstep. Also made some yummy cookies.

Friday is Beltane, so going to make a honey cake and some oat bread on thursday night for that.

All of this looks amazing!! I just moved in with my boyfriend in early March but haven’t brought my kitchen stuff yet – plus it’s a pretty small kitchen. I also grew up using a Kitchenaid mixer and don’t have one here so that’s kind of off-putting to me for most baking. 

We’ve mostly just done super easy, minimal work things like crescent rolls from a tube, break and bake cookies, etc. I don’t have the proper cake pans here either so I’m a bit limited, as well as never being sure what in our grocery list won’t get fulfilled these days. 

Looking forward to some homemade pizza, cookies, and cakes! We also want to try making bread; I’ve only done it in a bread maker before but yeast also seems to be in high demand.
