So I am not super busy, BUT I am extremely fussy… I hate pretty much all vegetables and fruits. For me, it’s all about the texture rather than the actual taste.
I used to work with a special needs girl and got the idea for how to store and preserve soup from her mom. I found about 5 – 10 soup recipes that I really enjoy (all extremely healthy and pureed). So I just thought I’d share…. One big batch of soup generally makes me about 10-15 servings of soup to freeze… On a day off, i might make 3 different soups, then I pour about 1.5 c into a medium sized freezer bag and zip it almost entirely closed. Then I lay it down and gently rub it from the bottom towards the top to get out all the air and finally zip the last bit closed. I stack them properly in the freezer, and once they’ve frozen overnight, you can throw them into the deep freeze so they don’t take up as much space.
I usually take two with me to work and i get my servings of fruits and veggies!
I’ll post some recipes in a few minutes….but if you’re a fussy eater like me or don’t have a lot of time for meal prep, this is great for a grab and go type thing. Just heat it up at work, or heat it up and throw it in a thermos before you go!

@MrsPhilly: yes please post! I’m a picky eater and lately I’ve been having problems keeping full on healthy foods. I actually just made some simple vegetable soup tonight and was thinking about how full soup keeps me. Looking forward to your recipes!
ETA: it’s nice that they take up so little space! Our freezer is tiny!

Thanks!!! I wasn’t sure if anyone would get anything out of this post, but I know my friends are all pretty into it and some have started doing this too.
I have to seriously recommend the Roasted Apple and Sweet potato.. I made that tonight and it’s soooooooooo good…I had 1.5c for dinner and was soooo full. And it tastes like thanks giving.
the Garlic tomato one isn’t as filling, but it’s seriously delicious… actually, I forgot to add that one! I can’t find the recipe, but here’s from memory:
Garlic Tomato Soup
8-10 tomatos (I peel them bc they puree easier, otherwise you get chunks of skin in your soup)
10-15 cloves of garlic (not full heads, cuz that’s crazy…just the individual cloves) not sure if i was using the right word!
Salt and pepper to taste
1 Onion, chopped
2tbsp Olive Oil
Add some celery for extra vitamins if you want… you won’t taste it
And any spices you want – salt, pepper, chili flakes
Broth (low sodium vegetable)
Peel and dice the tomatoes, chop the garlic. Saute the onions and celery in a deep pot with the oil for a few minutes til translucent. THen add tomatoes and garlic and enough broth to cover (4 cups or so)… bring to a boil and then simmer for 15 min…. when done, puree in a blender.

I have MS and never know when my energy might be too tapped out to prepare something nutritious, so ‘pre-gaming’ it when I do have the energy is the best ues of my time. I’m staring at the sweet potato in the kitchen now. It has a date with destiny…

@Bette_Noire: haha Glad I could help… it’s seriously delicious.. like thanksgiving in a bowl… I find I taste the apple more than the sweet potato. It’s such a great soup. Let me know if you liked it!

@MrsPhilly: Ooh, this is such a good idea! I happen to love most veggies in many forms but I HATE making lunches for myself, whether it’s the night before (when I’m all full from dinner and don’t want to think about food) or in the early AM when I’m not hungry and many savory foods seem icky to me. I have also noticed that soup keeps me really full. I’m going to do this this weekend. I’m glad I saw this today as I am going food shopping later. Thanks!

I’m going to try the sweet potato and apple soup this weekend. Jason’s Deli has a Harvest Sweet Potato and pork stew that I have been trying to copy so I will see if this gets me there!
