i’m sorry to hear about your frustration.  I canned about 200 jars of jam, apple pie filling, and apple sauce last year and the 4 ounce jars were a pain because nothing really fit in them after leaving the headspace and the size was really annoying to use in my water bath canner.  The most reliable place for jars I found were at Ace Hardware and Walmart Stores. 

The only problem I see with canning salsa and other veggies is that they require pressure canning or some way to increase the acidity (vinegar, lemon juice, citric acid).

I didn’t have my own garden but many people gave me fruit from their yards.  we got awesome Colorado plums that I used to make the best plum jam ever.  I also got boxes of apples.  Other fruit and berries I purchased on sale. Mango jam was cheap to make and very popular.

I think that is an adorable idea for favors!! I don’t know where all you looked, but a few weeks ago I know our local Family Dollar store was carrying the 4 oz canning jars, maybe they might have some in your area, too? Hope This Helps, and good luck!!
