Today I guiltily sent Darling Husband to work with a small lunch and no supper (he works late tonight), I promised I’d bring him something by later today…. we were away this weekend so there aren’t any leftovers (I usually just cook one or two extra plates with supper). So, since its a rainy ugly Monday I figure its a good time to stock up on freezer meals!
What kind of things do you cook for lunches and freeze?
Everything I make seems to be tomato based (Chili, boeuf borgignon, lasagna) so I want to mix it up…

@bella128: Macaroni and Cheese freezes very well. I highly recommend Martha Stewart’s “Perfect Macaroni and Cheese” recipe.
I might as well call this “engagement mac and cheese” haha, because I am guessing this was no small part in Darling Husband deciding to propse. It’s infamous among my friends and family. They don’t know it’s Martha Stewart’s recipe though 🙂

Soup! Most soup freezes beautifully, as long as you leave out the pasta, potatoes or cream. Make a pesto minestrone with lots of veggies – yum!

Mix up a meatloaf, but portion it & bake it in a cupcake pan. Easy to freeze & makes perfect lunchsized portions!

I make freezer burritos quite often when I know I have a busy time coming up. You individually wrap them in tinfoil to freeze, and then to reheat wrap them in a damp paper towel and heat for 1-2 min. Mostly I stick to bean, rice and cheese, but ground beef or chicken would also work if you wanted more meat.
