Shepherd’s pie, chicken pot pie, meatloaf, spaghtetti and meatballs. Many larger grocery stores now carry gluten free products in their own section Hurray! Us wheat sufferers can now eat many of the foods we had to give up. I just made a rocking meatloaf last week. I  hadn’t been able to eat meatloaf for years.

I am Gluten Free and it’s still hard for ME to come up with dishes to make, so I know how tough it must be for you! Here are some links to some yummy Girlfriend recipes:

You could make this soup and freeze it in small containers, so she just has to heat up one at a time. Also, be sure the bouillon is Girlfriend and if you add noodles, use Girlfriend ones: http://allrecipes.com/recipe/chicken-soup-iii/detail.aspx

Stuffed chicken with goat cheese and spinach and a

 stuffed portabello mushrooms with carmelized onions, blue cheese and sausage

Most “real” food is gluten free so its actually pretty easy. meats, veggies, fruits, potatoes, rice.

Just watch sauces and premade things (even soy sauce and broths)

Here are a couple of ideas

A roasted chicken and a salad; a pot roast with all the fixing; chili; a glazed ham with carrots and sweet potatoes; roasted pork chops with a peach and plum sauce; soups; baked acorn squash stuffed with sausage and fruits
