Our friends are having twins, which is quite exciting! But also a little daunting for them. I want to make a dish or two to bring over for them after the twins arrive to help them out, but the mom is celiac so it needs to be gluten-free. Any suggestions? Can be freezable, but needn’t necessarily be so.

Shepherd’s pie, chicken pot pie, meatloaf, spaghtetti and meatballs. Many larger grocery stores now carry gluten free products in their own section Hurray! Us wheat sufferers can now eat many of the foods we had to give up. I just made a rocking meatloaf last week. I hadn’t been able to eat meatloaf for years.

I am Gluten Free and it’s still hard for ME to come up with dishes to make, so I know how tough it must be for you! Here are some links to some yummy Girlfriend recipes:
You could make this soup and freeze it in small containers, so she just has to heat up one at a time. Also, be sure the bouillon is Girlfriend and if you add noodles, use Girlfriend ones: http://allrecipes.com/recipe/chicken-soup-iii/detail.aspx
Or, you could get some of these Girlfriend lasagna noodles and make a general lasagna recipe:
