Hosting a good friend of my bf’s for dinner and I need some recipes that are gluten-free and ok for her to eat during her pregnancy (with twins!). She was formerly a vegetarian as well, but her celiac disease got worse so she started eating meat again to ensure she was getting enough proteins, or this would be even tougher than it is.

We just made these vegan tacos the other night… Mmmmmm, so good! You can use gluten-free tortillas and gluten-free cornmeal (both available at health food stores, if not your regular grocery store). We also added avocado, instead of sour cream and cheese. Here’s the recipe:
