So no shellfish, not seafood.  Sounds like you’re going to have to stick to protein + veggies.  I have a George Foreman grill that I love.  I marinate my protein overnight, and it just takes a few minutes to grill.  I would do some steamed broccoli, roasted asparagus, or sauteed green beans for veggies with whatever types of protein you like.  Do you have to stick to fish or can you eat poultry and beef as well?  I love baked salmon if you have to stick to fish.  (Preheat oven to 400, put salmon filet in tin foil pouch with some rosemary and lemon slices and bake for 20ish minutes until it’s cooked through).  Very easy and yummy.
