I’m getting married outdoors and we’re having a buffet and one thing we’re doing is a carved meat. Carved meat is the most fresh, so that’s good for a buffet. Otherwise, I would talk to your caterer and see what works best for your venue. Most caterers, if they do buffets, will know how to properly prepare the food. But I would refrain from anything that needs to be kept especially cool. That’s why I’m not doing a cheese platter for my outdoor wedding. Warm cheese = yuck!

What is the theme or feel of your wedding?  You can never go wrong with pulled pork, sliced roast beef, or chicken.  Mashed potatoes, green beans, scalloped potatos, au gratin potatos, corn, cole slaw (especially with pulled pork, yum) potato salad, baked beens.   Ok, now I am really hungry.
