Father-In-Law is joining Darling Husband for dinner tonight (I have meetings on Wednesdays) and for dinner I’ve got a pot roast in the slow cooker and I’ve thrown in carrots, potatoes, onions, and of course beef broth.
I’m having trouble deciding on a side for this dish. I know the veggies/starch work as a side but I’m thinking we need one more side. Any suggestions?

maybe a salad or a grilled green veg? roasted broccoli and chickpeas are my new favorite – toss with a little olive oil and spices and put it on a baking sheet, bake until roasted. or roasted asparagus!

anonladygrace: I’m with PP on this one when it comes to the green bean w/ almonds….a pot roast w/ carrots, potatoes, etc. in a slow cooker will be all “soft” foods (though delicious, I’m sure!), so some nice crispy/crunchy green beans or asparagus will add a little variety to the textures of the meal.

Asparagus would be nice. TBH, when I make that in my slow cooker, I just throw in a can of lima beans with it and call it a meal.

I honestly never add anything else. The meat, carrots, and potatoes are enough. BUT – if I were to add something, I’d go with a nice salad. Perhaps you could add a nice dessert as well if you feel like it’s not enough.

I agree with all of the above but for me and my house. Baked mac n cheese. My answer for everything baked mac n cheese with a juicy full body red wine.LOL
