That’s an amazing idea :). We’re not doing it because our venue is a little more traditional so we’re sticking to the average buffet, but you should totally go for it.

I was thinking about it (because pizza is, like, my favorite food ever!) but the Fiance shot it down pretty quickly. I was thinking about hiring a caterer (look into your local Union Gospel Mission…I know mine does catering and all of the proceeds go back into the soup kitchen, plus the “top level” of homeless trainers are building job skills by working an event) and having them make small pizzas of all kinds of toppings on hand-made dough. I think that hand-made dough just makes the pizza a little more special. I was going to have it “buffet-style” and serve it by the slice.

    Hope that helps!

@Lindsey2005: No, I did not. However, if you go with a caterering company, they should have the equipment and tricks to keep it warm (at least, you would think!) If you’re DIY-ing the food, I suggest booking a meeting with a couple caterers and doing the pre-meeting stuff like as in if you were actually looking for a caterer and then ask them the questions you still have about the pizza bar.

I hope you do it! It sounds like a LOT of fun!

@Lindsey2005: Oh! I did a google search! If you “stone” the pizzas, they will stay warmer longer.

mini raviolis?  Mozzerella sticks?  I dunno, things that go well with marinara sauce!  =)

EDIT:  By the way, I’m insanely jealous of your wedding!  (Mostly because I can’t eat for another four hours, and I’m STARVING!)  haha =)

It’s a great idea and would be super yummy, but I think it might be difficult logistically.

People stand in line and put various toppings on an uncooked pizza at the end of the line it’s put in the oven and ….what do they do for 10-15 minutes while it cooks? How do you keep track of whose is whose?

If you use already cooked pizzas and just add ingredients on top then you’d still have to put it in an oven for a couple minutes to melt any cheese on top and incorporate the ingredients. And having cooked pizza sitting around and then putting it back in the oven might make the crust turn hard or gross.

I just don’t know. I’ve done a pizza buffet for a party before but there were only like 12 people and we could do 3 at a time and it wasn’t a big deal to wait 10 minutes in between. And even then it only turned out so-so, the pizza was good but not better than regular pizza.

Maybe just have a bunch of different kinds available.
