I’m not a veggie but every now and then I do like a good veggie meal. My favourite is a broccoli and courgette  tagine. I make if by cooking either passata or tinned tomatoes, cook some courgette and broccoli and mix together. Add lemon juice for flavour and serve with couscous. Simple, easy and delicious.

Hodgy527:  ratatouille! We do a lot of egg dinners. We love breakfast for dinner. Falafel with hummus in a pita. Shakshuka (I’m Jewish, so a lot of my faves are Israeli).

Three-cheese spinach lasagna rolls

Black bean and butternut squash enchilada skillet

Homemade pizza with pineapple and hot peppers (or mini eggplant pizzas)

Pumpkin soup, black bean soup, tomato soup

Just about anything made from butternut or spaghetti squash

Skinny baked macaroni and cheese with broccoli

Cheesy pumpkin pasta

Chipotle bean burritos


Veggie fried quinoa (or rice)

Mushroom risotto is always one of my fav go to recipes. 

Fried rice with veggies.

Pad thai with tofu.

Tacos/burritos with beans.

Hodgy527:  Look on epicurious.com that is my favorite site for recipes because it includes various well known chef’s recipes, recipes found in magazines and cook books and it has user submitted recipes as well! I also like to experiment, so once I find something I like or am interested in, I usually just make substitutions or modifications by swapping out an ingredient.

Being a vegetarian is super easy. Pick vegetables you like and you can pretty much cook it any way you like. Veggie burgers, vegan meat substitutes, pasta, etc..

My favorite quick go to for lunch and or dinner are usually veggie tacos.

I stirfry mixed vegetables (I usually use zucchini, yellow squash, red onions, yellow and orange peppers) and I either make my own taco seasoning or you can use any of your favorite prepackaged seasonings/skillet sauces.

i like corn tortillas but you can use any kind you like.

For garnish I make a mango and corn fresh salsa (there are various recipes out there) or you can do a regular store bought salsa and I make guacamole (again, you can use store bought if you cant find the right fresh ingredients or are short on time)

it is delicious and filling.

For pasta I like a mixed mushroom and onion pasta (I like cavatelli or gemelli for this because it picks up the sauce nicely but occasionally use cheese, butternut squash, or pumpkin ravioli). I sautee the mushrooms, onion and garlic with a little bit of olive oil then for the sauce I add a little bit of butter, sage, salt/pepper, a little bit of veggie stock and parmesan cheese. If you like it creamier you can add a little bit of cream.

Veggie burgers- I love anything Dr. Praegers especially the kale burger. I just had one for lunch with a spicy guacamole on it and my side dish was a cucumber, onion and tomato salad with just a little lemon, salt, pepper and olive oil.

I could go on and on… If you have any favorite dishes just make it without the meat 🙂
