That sounds delicious! So many of these things are popping up. Mashed tater bar, mac and cheese bar, risotto bar. Yummy!

I am a huge fan of grits and would be thrilled to see them on a wedding menu, but you’ll have to figure out a way to keep them from turning into a lump if you’re serving them over an extended period of time.  I found it helps to make them a little thinner (more water, less grits) than the recipe recommends if I’m serving them buffet style at a party.  Love the idea of doing the add-ins – let us know how that turns out!

@babybee92:  Stirring is definitely good!  I’m not so sure I’d add water after they’re already cooked, but you could experiment in advance.  On the plus side, MORE GRITS to eat!

Hold the phone. A GRITS bar!?! That sounds amazing! The only suggestion I have: smoked gouda grits. Holy hell they are so good and I would consider them a unique and classy addition.

As for the martini glasses…hmm…I would poke around online for commercial retailers and try to buyin bulk. Please let us know how it goes!

Aren’t grits a breakfast food? I’ve seen candy bars, desert bars, nacho bars, and heard of mashed potato bars.. but no, I’ve never seen grits at a wedding.

I love this idea. I went to a party with a mashed potato bar and it was fab! They also used martini glasses, so I love the idea. I am actually a big fan of shrimp and grits and grits and scallops! Those are so good they’ll make you slap yo’ mama!!!

@MrsBroccoli:  Not strictly. Down in the south grits are often a companion to dinner meals, or the meal itself (i.e. shrimp n’ grits or as one frined loves to amke for his kiddos, fish n’ grits)
